Now that the weather has started to feel more like fall, I've been aching to cook heartier meals. I have some beef in the oven simmering away right now with onions and fire-roasted tomatoes. It smells like heaven in here. Actually, scratch that. I just pulled the pot out of the oven and gave it a taste test. Oh...I'm hungry and it's not for supper tonight! I'm making it to reheat for supper tomorrow night. Wednesdays are busy days for us since I take Zach to Richmond for his allergy shots after he gets home from school.
Supper tonight will be homemade tacos, cheesy rice and refried beans. The kids love taco night. I'd rather have tacos from the Mexican restaurant since I can NOT seem to replicate their recipe at home. But, until we win the lottery and can afford to eat out on a whim...homemade tacos will have to do!
I have not been feeling the greatest lately so I haven't really cooked anything in a week other than just grilling a piece of meat and boiling some veggies. True excitement there, let me tell ya...

I have been meaning to post a blog about what I've been cooking lately. It seems like when I'm in the mood to write, I have no time. When I have the time to write, I have no inspiration. I'm not a creative person in terms of writing. I can write a professional letter off the top of my head but when it comes to expressing myself in words...well I feel like a freshman in speech class with nothing prepared!
Over the past several days, I have been in cooking mode big time. I've made some really delicious meals. The highlight from last week was my cheeseburger/potato soup. Oh...my...gosh it was so good. On Sunday I decided to make french toast, eggs and bacon for breakfast. After that, we went to the orchard for some apples (which I ended up not doing anything with yet!). When we got home I made chili for supper that night plus I made a meal for Monday night. That was diced chicken tossed with spaghetti, bell peppers, onions, garlic and fire-roasted tomatoes. YUM!! Tonight was breaded pork tenderloins, mashed sweet potatoes, peas (for the kids) and salad (for me). I also made a meal for later in the week...stuffed shells. We are a pasta loving family around here.
Maybe if I blog about my diet, I'll be able to make some positive changes in the way I eat. I really need to lose some weight and change my diet. Exercise would help, too, I'm sure...

{Refresh}
Hi friends! It has been a long time since I've posted anything. In fact, it had been so long that I decided to go with a whole new look.
I have had a lot of things going on lately. Zach started school, and it wasn't as traumatic as I feared. He's doing well! Lizzy has adjusted to having Daddy all to herself in the morning. However, she will have another adjustment in the near future. Mike will be going to third shift in about a month or so. He doesn't get to see Zach at all through the week.
I'm still working at Everton Water. Mike's still at Belden...thankfully!
I hope everyone has a wonderful Labor Day weekend!
